Nugali Chocolates was founded in 2004 in the city of Pomerode, in Santa Catarina, Brazil. It is one of the few brands in Brazil to manufacture its own chocolate. In its formulations, it uses only selected raw materials, such as gourmet cocoa, natural vanilla, and the purest cocoa butter.

In the interview shared below, we gain insights into the Nugali Chocolates products with a fresh perspective on the values and qualities producer is looking for in the production journey.

Q. What is the core product of Your brand?

With 70% cocoa content, Nugali Dark Chocolate 70% is the most produced and best-seller by Nugali. It’s formulated with a gourmet cocoa blend, lightly roasted to reveal cocoa-like almond notes. Internationally awarded the Bronze Medal – Americas by the International Chocolate Awards 2019 and Gold by the America Food Awards 2020. With a high content of cocoa (and flavonoids) and less sugar, it’s considered a food with beneficial properties for our health. A healthy chocolate, without ingredients of animal origin, without preservatives, colorings or artificial flavors. Gluten free, lactose free. Vegan and Kosher Certified.

Q. Tell us about the process Your product goes through, from sourcing to the packaging phase?

“The main ingredient in chocolate is cocoa, so the quality of the chocolate depends on the quality of the cocoa beans.
Cacao care starts with selecting the best plants, caring for the soil and irrigation and continues with harvesting, fermenting and drying in the sun. Nugali receives its cocoa beans directly from Brazilian producers. In addition to ensuring the quality of the beans, the origin, the sustainability and the traceability of each batch of cocoa, the direct purchase from the producer improves the living conditions of the man in the field.

The fermented and dried almonds, coming directly from the producers, arrive at the Nugali factory to become the best chocolates. At Nugali, almonds are roasted and ground into cocoa paste.

The cocoa paste goes to the conching, where it receives the other ingredients – such as cocoa butter, sugar and milk, and the mixture is heated and stirred for hours and turns into liquid chocolate, which is refined to acquire a fine and velvety texture. . The long conching allows the flavors of the chocolates to develop. And low temperatures ensure the maintenance of flavonoids (natural cocoa antioxidants).

Liquid chocolate receives the thermal shock – the tempering, essential for the chocolate to acquire shine and consistency after molding. Now tempered chocolate will be molded into its final shape, in molds for bars, tablets, and other special shapes. You can also form the shells of the bonbons or cover the dragées.

In the molds, with the chocolate still liquid, it passes through the crystallization tunnel, where it is slowly cooled to a temperature of 8ºC, so that the cocoa butter present in the chocolate forms crystals and the chocolate becomes completely solid.

The already crystallized and solid chocolates are demolded and packaged.”

Q. What are the qualities You are looking for when creating Your product?

“Nugali Chocolates uses only natural ingredients in its chocolates. Therefore, in the process of researching and developing new products, we use only the purest cocoa butter, real vanilla, the best Brazilian cocoa and no artificial flavoring, coloring or preservatives in our formulations.

Nugali’s chocolates are Zero Trans Fat and we pride ourselves on not using, nor have we ever used, trans fats. We believe in a more natural diet, which is why chocolates are also made with fewer ingredients – clean label.

Each ingredient is carefully selected and our formulations and processes seek to bring out the best of nature in each one. Our commitment is to produce the best chocolate, in a sustainable way and with the best ingredients, ensuring the tranquility of those who consume Nugali products.”

Q.  What makes Your product better than the one of Your competitor?

“Nugali believes that sustainability must permeate its entire production chain and applies sustainable practices in line with the UN Sustainable Development Goals. This is just one of the differentials of the Nugali portfolio against the competition.

The inner packaging of Nugali products is 100% biodegradable. The biofilm that protects our chocolates is made from kraft paper, biopolymer and aluminum, and it breaks down completely. With the replacement of internal packaging in Nugali’s line of tablets and bars, we reduced the use of single-use plastics in our products by 75%. Inner packaging, under landfill conditions, will completely decompose in less time.

Reducing the use of plastics and replacing it with increasingly sustainable packaging are Nugali’s actions in line with the ONU’s Sustainable Development Goal 12. ODS 12 seeks to ensure sustainable consumption and production patterns, with environmentally sound management of all waste, throughout their entire life cycle, significantly reducing their release into the air, water and soil, to minimize their negative impacts. on human health and the environment.”

Q. What is the greatest challenge You’ve encountered while creating Your product?

“One of the biggest challenges of our product is to maintain the flavor standard using only natural ingredients. This is a difficulty that other companies do not usually go through, because
use additives or artificial ingredients to mask flavors, bring color or prolong the shelf life of the product.
Because these additives bring several health hazards, Nugali chocolates are made only with natural ingredients. The cocoa we use, as it is a natural ingredient, due to changes in soil and climate, it may vary in flavor and aroma from one harvest to another or even from one batch to another.
In this way, it takes hard work in roasting and conching the cocoa so that the flavor of Brazilian beans is always in the standard range that our consumers expect.”
